Pomona’s Universal Pectin is a 100% pure low-methoxyl citrus pectin, specially formulated for making low-sweetener jam and jelly. Pomona’s is vegan and free from sugar, preservatives, dextrose, GMOs, and gluten. There are no additives or apple by-products. Pomona’s is made in Denmark by extracting the pectin from the dried peel of lemon, lime, and orange after the fruit has been juiced and the oil has been pressed out of the peel.
Pomona’s Pectin is activated by calcium, not by sugar, so calcium must be present in the mixture for the fruit to jell. Each 28g box of Pomona’s Pectin contains a packet of pectin, a packet of calcium powder, and a sheet of directions and recipes, including directions for making calcium water with the calcium powder. A small, measured amount of calcium water is included in all Pomona’s recipes.
